Among these strong flavors the famous calabrian ’nduja could not miss: a very hot spreadable soft salami, whose name comes from the French word „andouille“, meaning sausage. The predominant red color is given, by the naturally dried red pepper, present in the dough together with the fat parts of the pig. Nduja is typical of Spilinga, but today it is produced everywhere in Calabria. Ideal to be spread on bread, it is also used as a condiment for pizza, bruschetta, as a sauce for pasta or as an ingredient to prepare spicy omelettes.
